You can add any additional ingredients if desired, such as tomatoes, bacon, or onions. Or you may choose to keep it more traditional which highlights the flavor and texture of the cheese.  You can also experiment with different cheese combinations.

Ultimate Grilled Cheese

Ingredients
  

OVERALL

  • 2 slices sour dough bread
  • 1 oz. cheese curd crumbles
  • 1 tbsp butter - unsalted
  • 0.5 tsp olive oil

SANDWICH FILLING

  • 1 oz. sharp cheddar - slice thin
  • 1 oz. gouda - slice thin
  • 1 oz. pepper jack - slice thin

Instructions
 

  • Preheat 10” cast iron skillet or nice heavy bottom sauté pan over medium heat. Melt butter in pan and toast both slices of bread on one side. Remove bread from pan.
  • Drizzle a small amount of olive oil in pan and place an even layer of cheese curd crumbles on bottom of pan. Return pan to heat and place bread toasted side down directly on top of cheese curd crumbles in an open-faced style.
  • Place sliced cheese on top of bread to cover evenly.
  • Cook over medium heat. Cheese curd crumbles will start to form a golden brown crust on bread as sliced cheese begins to melt.
  • Once the sliced cheese is melted and crust is golden brown you sandwich slices together and remove from pan. Place on a cutting board to let rest before slicing in half. This will help to prevent excess cheese from oozing out.

Olive Oil Marinated Cheese Curds

Natural white cheese curds infused with fresh herbs.

Ingredients
  

OVERALL

  • 1 cup extra virgin olive oil
  • 3 large sprigs fresh thyme
  • 2 sprigs fresh rosemary - about 4 inches long
  • 1 small dried red chile, cut in three pieces

CHEESE

  • 5 oz. Bag Ellsworth Natural Cheese Curds

Instructions
 

  • In a small saucepan, heat olive oil, thyme, rosemary and chile over medium heat until the oil is hot - about two minutes. Remove from heat and cool to room temperature.
  • Put cheese curds in a glass bowl. Pour the olive oil mixture over curds, cover and refrigerate for at least 4 hours.
  • Remove from refrigerator and allow to come to room temperature before serving. Note: Can marinate up to three days - the longer the better for more flavor!

Bloody Mary Grilled Cheese

  • 4 slices white sturdy/rustic bread of your choice
  • Ellsworth Cooperative Creamery Butter
  • Your favorite Bloody Mary Mix

Cheese Blend:

  • 0.25 cup Grated Blaser’s Sharp Cheddar
  • 0.25 cup Grated Blaser’s Hot Pepper Jack
  • 0.25 cup Grated Blaser’s Horseradish cheese
  • 2 tbsp Ellsworth Cooperative Creamery Cheese Curd Crumbles
  • 3 tbsp Finely chopped celery
  • 3 tbsp Finely chopped green onion

Sandwich Fillings:

  • 4 slices bacon, fried crisp
  • 3 yellow banana peppers, sliced lengthwise
  • 3 baby dill pickles, sliced lengthwise

Beer Batter:

  • 1 egg
  • 0.75 cup beer
  • 0.25 cup flour
  • 3 drops Tabasco (or more to taste)
  • 0.125 tsp chili powder (or more to taste)

Instructions
 

  • Simmer 1 cup Bloody Mary Mix over medium heat until reduced and slightly thickened (will be about 2/3 cup). Keep warm on stovetop.
  • Meanwhile, toss together cheeses, celery, and green onion in small bowl. Set aside.
  • Blend beer batter ingredients together in a shallow pan. Set aside.
  • Lay out 4 pieces of bread. Cover each piece with some of the cheese blend. On two of the slices, place bacon and top with more cheese blend. On the other two slices layer banana peppers and pickles, top with more cheese blend. TIP: At this point, microwave or broil open-face just until cheese begins to melt. This will help hold sandwich together through next steps.
  • Put each of the two sandwich sides together, cheeses and fixings to the middle. Preheat griddle to medium-low heat. Melt butter on griddle. Dip each sandwich into beer batter, then flip to dip opposite side. Place on griddle and cook slowly 3-4 minutes on each side, until golden brown. Serve with Bloody Mary Dipping Sauce.
